SAMPLE DRINKS MENU
Signature cocktails:
- Le Hora de la Fresa – Principe de Los Apostoles Gin, Cascara Vermouth, Fernet Branca, Strawberry
[Non-alcoholic option – Strawberry Syrup, Fresh Lime, Ginger Ale]
A 19th Century wave of European migrants to South America brought Italian culture, culinary traditions, and the beloved vermouth and Fernet Branca to Argentina. These drinks gradually became deeply intertwined with the country’s social rituals, their influence solidified by “la hora del vermut”, or the vermouth hour, an Argentinian custom. These two herbal concoctions are brought together in this drink, alongside a regional favourite: strawberries. Fruity, enlivening, and crushable, this cocktail is perfect for all-day drinking.
- Corazón y Alma – Mezcal, Reposado Tequila, Nixta Licor de Elote (corn liqueur)
Alongside chillies, corn was one of the first plants to be domesticated in Mexico, around 4,000 BCE. For many of the indigenous tribes, corn was sacred, believed by the Mayans to have been part of mankind’s creation and granting us a soul. From the heart of the agave plant, both tequila and mezcal are created, the two spirits most synonymous with Mexico. In this cocktail, these ingredients are brought together harmoniously, balancing sweet, spicy, smoky, and umami flavours.
- Cloud Cover – Blanco Tequila, Italicus Rosolio di Bergamotto, Muyu Vetiver Gris, Lemon Verbena, Green Apple
Humid air rises from the largely inaccessible Ecuador’s Choco-Andean Cloud Forest, which towers 1,400m above the Amazon, and cools at these high altitudes, forming swirling mists that coat the trees. The entire forest is blanketed in green vegetation and colourful flowers, creating the perfect sanctuary for wildlife. Inspired by this fantastical atmosphere, we have created a cocktail that arrives enveloped in mist and will carry with it subtle earthy tones and bright green flavours.
- Sacred Valley – Peruvian Pisco, Aperol, Guava Juice, Grapefruit Cordial, Sparkling Wine, Soda
Located in the region of Urubamba, Peru, the Sacred Valley was formed and is irrigated by the Urubamba River. While many civilisations used the valley for growing, it was the Incan Empire who revolutionised the approach to agriculture, the impact of which is still felt today. Inspired by Peruvian crops, and particularly the guava fruit, this cocktail is a deliciously fruity spritz which can be enjoyed at brunch or throughout the evening.
