Two well-known Northern businesses are joining up in the autumn to bring the first pub inside Europe’s biggest covered market in its 150 year history.
The Owl is a gastropub which will open on the Market’s Fish & Game Row as a collaboration between Northern Monk and HOME restaurant owners Liz Cottam and Mark Owens.
A new beer, Wisdom, is brewed especially for The Owl. It’s a 5% hazy pale ale, promising hints of lemon verbena and a refreshing friend of food! There’ll be give other beer lines, together with a number of fine wines on tap.
It seems an excellent reason to focus on the Market for the weekly shop, before taking the strain off for an hour or two to enjoy The Owl’s food menu as well as sampling the brews.
Liz and Mark will both be serving whole roast fish and game, with the accent on culinary expertise presented simply. and paired with just the right beers or wine. There will also be a snack menu which is grill-based. Think wild boar and bone marrow sausage, toasted brioche buns and melted cheese and house pickles.
Founder of Northern Monk, Russell Bisset said “At Northern Monk, we’re determined to create some of the best beer experiences in the world. That ambition has been our driving force since we were based in a cellar, back in 2013. A lot has changed for the brewery – but that same drive remains. When we were approached by Liz and the team at HOME, and presented with the chance of working with a team with the same ambitions for food experiences, it was something we jumped at. Pair that with delivering those food and beer experiences in the largest covered market in Europe – a building steeped in local history and heritage and one of the North’s great treasures – and we knew we were on to something special.”
Liz Cottam added “I love working with Northern Monk; my team and theirs share a genuine commitment to doing things right, and we all love creating cool stuff. I’ve always been drawn to owning a pub (having grown up in them), but wanted to do it differently. The opportunity at Kirkgate Market, together with the Northern Monk collaboration, just makes so much sense to me. I know people want to support the market and local businesses, and I hope that more businesses will follow us into this great space.”
